Isabella’s Italian Green Wet Rub

(For White Meat or Vegetables)
Ingredients:
½ c Olive Oil
½ c Basil Leaves, Washed and Dried
¼ c Thyme, Washed, Dried, Stalked
¼ c Origanum, Washed, Dried, Stalked
¼ c Marjoram, Washed, Dried, Stalked
¼ c Fennel, Finely chopped
¼ c Green Olives, Pitted and Chopped Finely
Zest of 1 Lemon
Juice of ½ a Lemon
Zest of 1 Lime
2 Garlic Cloves
1 t Black Pepper
½ t Nutmeg
Twig of Rosemary, Washed and Dried, Stalked and Chopped Finely
1 Spring Onion, chopped
1 Lemon Leaf
1 Bay Leaf

Instructions:
Combine all the ingredients and spread onto a Whole Chicken, Pork Cutlets, Fish or Grilled Dishes. Grill over a Medium heat as to not burn the rub.
