Italian Zesty Herb and Garlic Oil

2c Olive & Seed Oil Blend
5 Fresh Thyme Twigs, Washed and Dried
10 cm Fresh Rosemary Twig, Washed and Dried
½ Handful of Fresh Origanum, Washed and Dried
2 Twigs of Fresh Marjoram, Washed and Dried
1 Zest of 1 Lemon, Fine
1 Dried Red Chili
1 Bay Leaf, Fresh
1 Lemon Leaf, Fresh
5 Pink Peppercorns
2-4 Garlic Cloves

1. Place all the ingredients in a Medium Heavy Based Pot and gently bring to a boil. Boil for 5 minutes at low heat. We do not want the oil to become dark and burn.
2. Remove from the heat and cover with a lid. Let this oil infuse for one hour.
3. Sterilize jars in the oven and pour the oil into the jars. Label, Date and Specify the Type of Oil the on the Label.
4. Replace all normal oil requirements in recipes with this flavour bursting oil. You can strain the oil or leave the Flavour Agents in the Oil for extra maturation. Store sealed in the Refrigerator.
