Lemon & Ginger

(For all White Meat)

½ c Fresh Lemon Juice
½ c Peach Chutney (*See Preserves)
½ c Olive Oil
¼ c Good Quality White Wine Vinegar
¼ c Castor Sugar, Honey or Maple Syrup
2 Tbsp Honey
2 Garlic Cloves, Chopped Fine
Large Thumb Ginger, Peeled, Chopped Finely
1 t Ginger, Ground
1 Twigg of Rosemary, Chopped Fine
Bundle of Thyme, Stalked
Zest of one Lemon
1 Lemon Leaf
1 Bay Leaf
Black Peppercorns
Pinch of Salt

Combine all the ingredients and marinate meat for 15-20 minutes in the refrigerator. Place on high heat to crisp up Pork Cutlets or Grill Chicken over medium heat.
