Barbeque Wet Rub

(For Ribs, Brisket and Rib Eye Steak)

4 Garlic Cloves
4 Tbsp Dark Brown Treacle Sugar
3 Tbsp Tomato Sauce
2 Tbsp Worcestershire Sauce
2 Tbsp Black Peppercorns
1 Tbsp Paprika, Sweet
1 Tbsp Paprika, Hot
1 Tbsp Paprika, Smoky
1 Tbsp Cumin Seed
1 Tbsp Garlic Flakes (*See Powders)
1 Tbsp Onion Powder (*See Powders)
1 t Ginger, Ground
1 t Mixed Spice, Ground
1 Red Chili, Stalked and Seeded
1 Medium Onion, Chopped Finely
1 Orange, Zest and Juice
½ Cayenne Pepper

Toast the spice for 5 minutes. Place all the ingredients in a blender and blitz until the desired texture. Store in a glass jar. Keeps well for 1 week. Store with a little drizzle of oil on the surface of the rub. Rub onto the Brisket or Meat and allow to sit for 1 hour before Grilling.
