North African Berbere Spice Rub

Ingredients:
2 Tbsp Black Peppercorns
2 Tbsp Paprika, Sweet
2 Tbsp Fenugreek Seed
2 Tbsp Ginger
2 Tbsp Salt
2 Tbsp Cumin
1 t Cardamom, Ground
1 t Cinnamon, Ground
1 t Turmeric, Ground
1 t Cayenne Pepper
1 t Cumin
½ t Cloves, Ground
½ t All Spic, Ground

Instructions:
Toast the Seeds and Spice for 5 minutes. Store in a glass jar in a cool dark place. Pair well with Red Meat, Okra, Roasted Vegetables, Roasted Corn on the Cob, Flatbreads and Maize “Pap”.
