Roasted Walnut Spread

¾ c Walnuts
¼ c Pine Nuts
½ c Sunflower Seeds
½ c Feta Cheese, Crumbled
¼ c Parmesan, Grated
1t Tomato Paste
1t Brown Sugar
1t Cumin Seed
Drizzle Balsamic Reduction
1 Sweet Red Pepper
2 Cloves Garlic
2 Medium Purple Onions
1 Tbsp Basil, Chopped
1 Tbsp Double Cream Yogurt
Olive Oil
Pepper, Black
Chives Bundle, Chopped

1. Roast the Pepper, Onions and Garlic with a splash of Olive Oil, a Drizzle of Balsamic Reduction, Tomato, Salt, Pepper, Cumin Seed, Tomato Paste and Brown Sugar until completely soft for 35-40 minutes @ 180◦C. Cool Slightly.
2. Dry Roast the Nuts and Seeds in a sauté pan until nutty and caramelised.
3. Place all the ingredients in a blender and whizz until smooth.
4. Check the consistency and if necessary, add more olive oil or seasoning.
5. Store in a glass jar with a little bit of vegetable oil on top and refrigerate.
6. Enjoy with Bruschetta, Pasta or Roasted Vegetables.
